OK Here we go!

I've been cooking like crazy the last few months, not fancy stuff, just throw things I like together and see what happens.  I used to hardly ever cook! I thought I didn't have time, so we would go out all the time, it seemed like a better way to manage time, drive thru! I was SHOCKED to find out that I could actually make something at home that was a million times healthier, cheaper and quick!

Here I am going to show you a picture of the concoction I made and tell you what went into it.  But, it's NOT fancy! I usually grab a couple things out of the fridge and build from there.  So many people have asked me to do this, I hope you're not disappointed.  I'm excited to get started because I actually have forgotten about some of the things I've thrown together and want to do some more planning.

Here's what I did today:


In a small nonstick frying pan I thew in 5 asparagus spears I cut into about 1 1/2 inch pieces, and a sliced up green pepper and zucchini that I sliced then chopped into half.  Get the pan nice and hot, throw in veggies and stir for a minute or so then splash in a tablespoon of water.  This will get nice and steamy and keep the veggies from just burning or sticking to the pan, because we don't want to bother with oil.  Then I sprinkle on some spices, this time was granulated garlic, pepper, sea salt and red pepper flakes.  After the veggies get fairly soft I added a chopped tomato.  

The tomato turns out to be VERY juicy and made a nice soupy looking broth so I quickly pulled out a package of Miracle Noodles and decided to make this a soup instead of stir fry.  If you're not familiar with Miracle Noodles I will give you the lowdown in a minute.  So this is it, dump it in a bowl slap the lid on it and call it lunch! Which is exactly what I did, just ate half of it and boy was it yummy.  

SO, Miracle Noodles you can buy them at Andys Market, and Super1, they come all squishy in a package, you rinse them and add them anywhere you would use regular noodles, they are kind of weird but really good:

* Easily absorbs the flavors of any soup, dish, or sauce.
* are instant and come in a variety of styles
